August 4th of 1693 is the date attributed to the invention of champagne by Dom Perignon. It’s not really true. The quote “come quickly I’m drinking the stars” is also attributed to him. It only dates back to an ad from the 1880’s. Sparkling wine had existed before Dom. While trying to remove the bubbles, though, he ended up making great contributions to the production of sparkling wine. Back then cellars would lose huge amounts of stock due to bottle exploding. So here’s to you, Dom. Thanks for the bubbles kinda.
